Annatto seeds extract is a natural water-soluble edible powder. It is extracted from the seeds of annatto. Our Annatto is a powder extracted/concentrated/dried from the seeds of Annatto.
There are two types annatto, water-soluble and oil-soluble Water soluble annatto is a red to brown liquid, block, powder or paste, with a slight odor. The main pigment component is the sodium or potassium salt of norbixin, a product of lignin hydrolysis. Oil soluble annatto is a red to brown solution or suspension. The main pigment component is Bixin. Red lignin is an orange purple crystal that is soluble in alkaline solutions, insoluble in acidic conditions and can form precipitates. It is insoluble in water, soluble in oils, propylene glycol, and acetone, and is not easily oxidized.
